I’ve blogged recently about how my local supermarket finally started carrying sweetened condensed milk again. I love having it on hand to stir into my coffee occasionally, but also because it’s one of the star ingredients in what has become a family favorite dessert. I came across this recipe awhile back for pound cake. It’s just the right amount of sweet, and perfect with a strong cup of coffee (we’ve been known to eat it for breakfast!).
The only thing I do differently than the original recipe is that I switch the flour for gluten free flour (I really like Pamela’s Artisan Blend for this recipe). Occasionally I play with different extracts depending on my mood or what I have had on hand. I think it could be really nice with orange or lemon extract, which I’ve yet to try!
This is the perfect dessert because it seems to please just about everyone- even people who claim to not have a big sweet tooth. I love to sprinkle powdered sugar on top and a sliced strawberry, just to add a little “fancy”… everyone likes fancy, right?
